On Wednesday I got my camcorder and it is small. I can not believe how tiny it is. I like it, and it is going to be perfect for what I am going to do. I am that much closer to getting this project on the road.

Yesterday Carol and I hung out. We had lunch at Thai Basil and then she helped me do some cleaning at my apartment and I cooked some pasta for dinner. The apartment is looking a lot better and I appreciated her helping me. I was a bit miffed at her though because she didn’t bother picking up the large or metal items off the floor before vacuuming and so all I heard was clunk clunk clunk while she vacuumed the floor and at one point it stopped working because the rubber cord for my laptop power supply got sucked up in there. I was not happy. That was the second time it ever got used and it cost me over $100.

The below recipe is something I haven’t had in a long time. It is something my mom used to make us kids when we were little. I just veganised it and am going to make it tonight or tomorrow. Hopefully it will taste the same when I make it after it has been veganised. I will take pictures and post when they are done. I think I am going to make them for my fat vegan chef site too. I need to think of a topic though.

Hot “Chicken” Sandwiches

3 oz. vegan cream cheese
3 T. Earth Balance, melted
2 c. vegan chicken, cubed
1/4 t. sea salt
1/8 t. pepper
2 T. rice or soy milk
1 T. onion, chopped (or the equivalent of dehydrated)
8 oz. canned crescent vegan rolls
3/4 c. bread crumbs, seasoned and finely crushed

Preheat oven to 350 degrees. Blend cream cheese and 2 T. earth balance (reserve 1 T.) until smooth. Add next 5 ingredients and mix well. Separate crescent rolls into 4 rectangles. Firmly press seams to seal. Spoon 1/2 c. “chicken” mixture onto center of each rectangle. Pull 4 corners of dough to top center of mixture. Twist slightly to seal. Brush tops with reserved margarine and dip in seasoned bread crumbs. Bake on ungreased cookie sheet 20-25 minutes or until golden brown. Makes 4 sandwiches.

Ignorance and Fear in Amerika

Isn’t it curious how the christianists are willing to jump on the science bandwagon when it suits them? And even if the science is still sketchy and inconclusive, if it can possibly seal their agenda, they are all over it. There is conclusive evidence that the world is round and revolves around the sun, yet you don’t hear about christianists jumping on that bandwagon.

And have you ever wondered why the Southern Baptists are so crazy? Look no further than their leaders.

Case in point- R. Albert Mohler Jr, President of the Southern Baptist Theological Seminary in Kentucky put forth in his blog that if science can prove that gayness is biological, then there ought to be a way to “cure” it before a baby is born… say with a patch the mother can wear on her belly that would alter the baby’s hormones. Mohler says it would be biblically sound to alter a baby genetically before it’s born. Is he suggesting that God made a mistake when he invented gayness? Isn’t that a sin? Perhaps God created gayness in order to help scientists segregate the “stupid gene” as displayed so prominantly by religio-fascists.

Are the christianists funding scientists to discover the gene that makes people eat shell fish, an abomination that comes before the abomination of gayness in Leviticus? Perhaps Mr Mohler should check with the Catholics who have supercharged baptisms that wipe away original sin.

I love it how the xtians will deny science like evolution but will use science to their own advantage. I remember watching Jesus Camp where there was this guy lecturing to children about how they shouldn’t believe in science and he was using a laptop and a projector to present his lecture. How fucking hypocritical is that? Don’t believe in the science of evolution and deny science in general but yet take the advantages that science has brought to you? Just like the bible. They pick and choose what they want to use to their own personal agenda and the rest they ignore. The old testament is full of stupid laws that through the miracles of modern medicines, science and technology no longer applies. hell, the reason why Jews don’t eat pig is because pig rotted way too fast and got Trichinella. now with modern refrigeration that can be contained a lot more easily. Maybe the bible thumpers who don’t believe in science needs to throw away their refrigerators and live pre-electricity. Heck, they all should live like Quakers.

I didn’t walk today. I didn’t feel like it. Tomorrow I am working an over night shift so I won’t be walking tomorrow either. Tomorrow is weigh in day too. I am scared.

Vegan pancakes

1 cup unbleached white flour
1/4 cup teff flour
2 Tbsp. vegan sugar
2 tsp. baking powder
1/4 tsp. sea salt
1/8 tsp. ground coriander
1/8 tsp. cinnamon
1/8 tsp. nutmeg
1 1/4 cups vanilla soy milk
2-3 Tbsp. vegetable oil


1. Mix all dry ingredients together.
2. Whisk in wet ingredients until relatively smooth. A few lumps are OK. Don’t overmix, as this can make the pancakes a little tough.
3. Brush some oil onto a pan and heat over medium heat for about 30 seconds.
4. Drop the batter onto the pan. When the top starts to bubble just slightly, flip it and heat for a short while longer until both sides are light brown. Brush the pan with oil before each new set of pancakes and note that cooking time will get progressively shorter as the pan heats up.
5. Serve and garnish however you like it.

Today on my way to work I was on Roosevelt and waiting for the light on 49th st / Bay Side bridge and I swear to Earth Mother that there were at least five cars that were turning on to Roosevelt well after the light turned green. Sickens me. That intersection needs a camera.

My schedule changed again today. Now I have Monday and Tuesdays off. Fucking sucks because I had something planned on April 1, and now I have to use one of my personal days to do it when it should have been a normal day off. Really frustrating. This is twice in a month and a half that they have randomly switched my days off without any consultation or heads up. Luckily there was availability to allow me to take the day off. I would have probably forced the day off anyway since I have already spent money to go to see Dan Piraro.

Oh, and my ears are all feeling pressure, like they need to be popped. I hope I am not getting an infection. They started feeling this way yesterday and today it is worse. I can hardly hear out of my left ear.

3 cups freshly mashed potatoes
1/4 cup diced onion
1/2 cup all-purpose flour
1/2 teaspoon sea salt
1/2 teaspoon black pepper

Canola oil for frying


Combine potatoes with flour, onion, salt, and pepper.

Heat oil (about 1/2 inch) in a large skillet to medium-high heat.

Shape potato mix into patties and fry in hot oil until brown, about 2 minutes on each side.

Drain on paper towels and serve hot with horseradish.

Serves: about 4

After walking around the building twice my calves start tensing up and hurting, this shows me how out of shape I really am because I can’t walk very far without something starting to hurt. I just ignore it and keep on walking. I have been averaging making it around the building six or seven times in about 40-45 minutes. I know that I am not burning that many calories, but I am raising my heart rate up towards the end and that gets the blood flowing and the metabolism up, and that is more my goal than anything.

Google has a new feature I like, themes. I chose the beach theme and it is pretty cool because after you enter your zip code the theme changes depending on where the sun is located at. I don’t know how many different changes it makes but through out the night the sun set and the sky turned deeper shades of purple. It is really cool.

Chocolate Strawberry Cream Pie
Makes 8 servings

3 cups sliced fresh strawberries (about 2-1/2 pints), divided
1 cup vegan sugar plus
2 teaspoons cornstarch
3.5 ounces agar agar
1 tablespoon Earth Balance
1 tablespoon lemon juice
1/4 cup vegan semi-sweet chocolate chips (Ghirardelli is awesome!)
1 block of silken tofu (extra firm) (the kind in the cardboard box)
1 cup of plain soy or rice milk
1 baked 9-inch pie crust, cooled
1 package vegan cream cheese, softened
Whole strawberries

1. Reserve 2 cups sliced strawberries. Mash remaining 1 cup sliced strawberries; add enough water to make 2 cups. Stir together sugar and cornstarch in medium saucepan; stir in mashed strawberries. Cook over medium heat until mixture comes to a boil, stirring constantly; cook 2 minutes, stirring constantly. Remove from heat. Add agar agar, margarine, and lemon juice; stir until agar agar is dissolved. Strain mixture; discard seeds. Refrigerate until partially set.

2. Take the tofu and rice milk and blend together. Set aside ¼ cup mixture, take the rest and add vegan sugar and whip a minute or two.

3. Meanwhile, place chocolate chips and 3 tablespoons tofu/milk mixture in small microwave-safe bowl. Microwave at HIGH (100%) 1 minute; stir. If necessary, microwave at HIGH an additional 15 seconds at a time, stirring after each heating, just until chips are melted when stirred. Spread chocolate mixture onto bottom of prepared crust; refrigerate 30 minutes or until firm.

4. Beat cream cheese and 1 tablespoon tofu/milk mixture in small bowl until smooth; spread over chocolate layer. Refrigerate filled crust while agar mixture is cooling.

5. When agar mixture is partially set, fold in reserved sliced strawberries; spoon mixture over cream cheese layer. Cover; refrigerate several hours or until firm. Just before serving, garnish with sweetened whipped tofu mixture and whole strawberries, if desired.

Refrigerate leftover pie.
